1 lb lean ground beef
1/4 C Taco Season or Taco Season Packet
Colby Jack shredded cheese
Grated Carrot (I use a three baby carrots)
Directions: Brown meat, drain if needed. Add taco season with 3/4 C of water, let simmer. Optional: add grated carrot, a small handful of spinach, and some parsley flakes. Clean + chop lettuce and tomato in preparation for salad. To dress: Put lettuce on plate, top with taco meat and continue with other toppings as each person desires. Garnish with parsley flakes (I have no idea why, but I use these one everything). Serve with round tortilla chips.

Tonight I cooked dinner while Jude built a wooden house right next to the table. He took such pride in his work. When I accidentally knocked it down, because I was putting food on the table, he let me know he was grumpy at me. I would be upset about it, but I am remembering that he must've learned that from someone. Must've been Colton (our freshman). Or me.
Maybe some Taco Tuesday will make him happy. I wish I could explain why, but my kids love a theme night. One that has stuck around here is Taco Tuesday. Exactly like it sounds, each Tuesday we have a taco related meal. Tonight it was Taco Salad. So easy, and a little lame to post for a recipe, I know.
My high school had a taco salad only lunch line. It was one of my favorites, just trumped by the steak (chicken fried steak) and mashed potato line. So, the nights I make this meal I try in every way to copy the salad I loved so much. If only I could serve it up in a cardboard paper dish.
One of the main ways to recreate lunch room taco salad is to serve the cheap round tortilla chips for scooping. It's the only time I choose to eat them, but for me, no other chip is better for this meal.
While we sat around the table we chatted about a spontaneous weekend trip for me to NYC, about possible homecoming dates for the high schoolers, and how Ronel loves dodgeball. Jude ate enough cheese to cause a problem, but alas he was happy with me once again. His hangry was over.
Tonight we set the table buffet style.
